‘standard’ cocoa bean will be a 100% Nacional blend fermented to have a classic Nacional proﬁle. The owner, Vicente Norero, has years of experience in microbiology, which brings a unique approach to fermentation, his deep understanding in this area led him to produce a variety of ﬂavor proﬁles.
We roast our beans to bring forward floral notes. We taste jasmine, fudge and almonds.
Store in a cool and dark place

Do not freeze!
Keep away from strong odors
Two-ingredient chocolate won’t go “bad” like milk chocolate or chocolate with additional ingredients (e.g. inclusions or nuts)
If your bar melts or blooms, the flavor notes will still be present though the bar will have lost its sharp snap and smooth feeling. Feel free to use bloomed chocolate for making hot chocolate or baking.
