cacao is grown organically on Akesson Estate that makes up one part of the 2000 hectare in nothwest Madagascar's Sambirano valley. This bean yield one of the world's most vibrant single origin chocolates. What sets Bejofo apart is its signature lively, bright acidity, a refreshing tartness that dances across the palate as the beautiful result of nature and careful craft.
We roast our beans to bring up citrus flavors. We taste raspberry lemonade.

Two-ingredient chocolate won’t go “bad” like milk chocolate or chocolate with additional ingredients (e.g. inclusions or nuts)
If your bar melts or blooms, the flavor notes will still be present though the bar will have lost its sharp snap and smooth feeling. Feel free to use bloomed chocolate for making hot chocolate or baking.
